The Viognier fruit is from Ben's own tenure at Piebald Gully, located in McLaren Vale coolest and wettest sub-region Clarendon, bordering the Adelaide Hills. It is planted in deep sand over orange ironstone impregnated friable clay producing aromatic, elegant fruit. Ripening occurs at Piebald Gully sometimes up to two weeks later than in the rest of McLaren Vale,

The fruit was hand-picked, then crushed and de-stemmed. Approximately 60% of the juice was drained (no pressing) into 3-8 year old French oak barriques. “Treat it mean, keep it keen” is the philosophy to follow with this delicate creature. No sulphur added at the harvest or crushing allows oxidation of the hard, bitter tannins, and then unclarified cloudy juice is drained directly into barrels and left un-inoculated (with yeast), allowing wild yeast to do their ‘thing’ creating an aromatic, complex textured wine.
